Sea urchin roe has been a delicacy in Japan, Asia, and Europe for more than 20 years. However over the past decade, most of the sea urchin fisheries have been overfished including Irelands.
The demand for sea urchin roe, called “uni” in sushi bars has grown dramatically over the past decade and thus urchins demand a high market price.
Exactly what is sea urchin roe? Inside both male and female urchins are five gonadal “tongues” that can grow up to two inches long and an inch wide. Inside the tongues are nutritive cells with either eggs (roe) or sperm.
EggsEggs can be supplied and shipped in batches as required. The numbers are approximate but are guaranteed to exceed number ordered. Fertilised eggs are similarly supplied. From experience the survival rate is satisfactory over 36hrs. | ![]() |
LarvaeLarvae can be transported live over 24 hrs without loss. These can be supplied up to 15 days old. | ![]() |
JuvenilesJuveniles are sold graded into sizes from 8-10mm to 25mm+. There are intermediate sizes also. In fact whatever size is required can be provided with sufficient lead in time. | ![]() |
